Chicken with morels for 2 people
Chicken legs simmered in stock, then reheated with morels and a touch of crème fraîche. A quick everyday dish, rich in flavour.

Method
Season the chicken legs with salt and pepper, then brown them in a pan with some of the butter.
Meanwhile, chop the shallots and clean the fresh morels under cold running water.
When the legs are nicely browned, add the shallots and the chicken stock. Cover and leave to simmer gently for about 40 minutes.
Once the chicken is cooked, remove it from the pan and keep it warm.
Reduce the remaining liquid by half while you sauté the morels in a little butter.
Add the morels and the liquid crème fraîche to the reduced stock, then bring back to a gentle simmer.
Return the chicken legs to the sauce and leave them to warm through for 5 minutes before serving.
Serve with white rice or a potato gratin.
