Wild morel
from the Himalayas.

India

These morels are harvested on the mountains of the Himalayan range, which stretches over 2,400 km long and 250 km wide.

They are dried in the open air, in the sun, on racks or strings. Sorted and cleaned, they are a delight: very aromatic, with notes of hazelnut and meat. Available with or without stems.

This is our reference, and the product we keep in stock all year round.

Morel from Sichuan,
the only cultivated one.

China · the only cultivated in our range

These morels are cultivated in Sichuan province. It took thirty years for a Chinese professor to develop a mycelium allowing morel cultivation. There is one harvest per year.

Delicate taste and very good. We stock them in two sizes, which serve different purposes:

  • 2 to 4 cm, stemless — the everyday size, regular and the most affordable in the range. This is the one used in our two blends, and it can also be bought alone.
  • 8 to 10 cm — for stuffing. A morel of this size is rare in the wild: this is precisely why it is cultivated. Thin and large, they hold up during cooking and are suitable for stuffing.

⚠️ Morels from China are the only cultivated ones. The Himalayas and Anatolia are wild-harvested.

Morel from Anatolia,
wild and aromatic.

Turkey · 2 to 6 cm, stemless

These morels come from southern Anatolia. They are collected in spring by villagers living on the plateaus of the Taurus Mountains, then dried at room temperature on strings.

Easily recognisable by its light brown stem and honeycombed cap, it is prized for its hazelnut flavour and thick flesh. New to our range.

Blends

Two blends,
two flavours.

A blend is not a discounted product: it is a culinary choice. The wild morel brings the aroma; the cultivated morel from Sichuan, in 2 to 4 cm, brings size consistency and a gentler price.

It is sent in two 500 g pouches that you mix yourself — hence the minimum of one kilo. And its price is exactly the average of the two origins: we do not charge for an assembly we do not perform.

Wild Himalayas · Sichuan 2 to 4 cm

The powerful aroma of the Himalayas — hazelnut and meat — combined with the cultivated morel from Sichuan in 2 to 4 cm. This is the most popular blend for everyday cooking, and the most affordable after the Chinese alone.

Turkey / China

Wild Anatolia · Sichuan 2 to 4 cm

The frank hazelnut flavour and thick flesh of Anatolia, with the consistency of Sichuan 2 to 4 cm. Milder than the Indian blend: Turkish morels are dried in the shade, not in the sun.

We source directly from the countries of origin — India, Turkey, China — and always keep stock available. Thanks to our contacts on site, we obtain the best batches.
