Chicken with Morels
A tender farm-reared chicken, flambéed with cognac and simmered with a cream and morel sauce. A rustic, comforting classic.

Method
Rinse the morels in cold water, then leave them to rehydrate in warm water for about sixty minutes. Drain them, carefully filtering their soaking liquid.
Sear the morels in a good knob of butter mixed with a dash of oil, then set aside. In a casserole, brown the chicken pieces in butter and a trickle of oil. Season with salt and pepper.
Flambé with cognac. Pour in the morel soaking liquid and let it simmer gently for about twenty minutes.
Stir in the single cream and the morels, then continue cooking for ten to fifteen minutes over very low heat.
Serve piping hot, accompanied by fresh pasta or white rice.
