Mini apple and white pudding tartlets with morels
Puff pastry bases filled with honey apple compote and a slice of white pudding with morels. These little bites are baked and served as canapés or a starter.

Method
Peel the apples, remove the core and seeds, then cut them into large wedges.
Put them in a cooking food processor with the honey and cook for 10 minutes at 90 °C. Then blend finely until smooth.
Preheat the oven to 180 °C and place the mini tartlet moulds on a perforated baking tray.
Roll out the puff pastry and prick it with a fork. Cut out about thirty pastry rounds and line the moulds with them.
Remove the skin from the white puddings and cut each one into fifteen slices.
Put a teaspoon of compote in each pastry base, then top with a slice of white pudding.
Bake for 12 to 15 minutes and serve warm.
